HACCP Food Safety Management & Internal Auditing

Description

The EHAI (Environmental Health Association of Ireland) Management of Food Safety training course is for personnel responsible for managing food operations in the food sector. Participants receive training in the principles and the effective management of food hygiene and safety.

This programme is delivered via Zoom over 6 x 4 Hour Training Sessions. All participants are required to take a written two-hour examination.  The participants will gain the knowledge and skills to formulate and implement a comprehensive HACCP Food Safety Management System and complete internal Food Safety Audits.

Objectives

The course is designed to enable supervisors, managers, owners, and people who see themselves in those roles to conform with Food Legislation, and the various E.U. directives and voluntary the NSAI Food Safety Food Standards

• Basic Microbiology Food Poisoning
• Food Borne Disease Personal Hygiene and Safety
• Food Purchasing, Delivery and Storage Food Preparation and Cooking
• Holding, Display, Service and Preservation Cleaning and Disinfection
• Legislation Introduction to the Principles of HACCP
• Design and Construction of Food Premises Management of Hygiene and Records
• Development & Auditing of the HACCP Food Safety System

Assessment

• Written Examination (40%)
• Project (60%)

Documentation

Each participant will receive a Programme Manual & Copy of the I.S.340:2007 (rev. 2015)

Examination

All participants must sit 2 Hour Examination and complete a HACCP Management Project.

Registration

There is a National Register for learners who complete this programme. This register is maintained by the EHAI.

Certification

Candidates who are successful in the examination will be awarded a certificate in the Management of Food Safety by the EHAI. The EHAI is the professional body representing Environmental Health Officers in Ireland employed by the HSE.
